Chocolate Oat MicroMuffins

Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup plain greek yogurt
  • 2 tbsp honey or maple syrup
  • 1 tbsp hemp hearts
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 handful broccoli microgreens
  • ½ cup chocolate chips or chocolate chunks
  • Optional (½ cup chopped nuts)

    Directions:

    Preheat the oven to 375 F

    Line a muffin tray with muffin cups or coat it in cooking oil spray (I use silicone baking cups and like to spray the inside of the baking cups with cooking oil spray). 

    In a powerful blender start combining the ingredients. Start with the eggs, bananas, yogurt, vanilla and honey (or maple syrup). Add the oats, microgreens, hemp hearts, baking soda, and baking powder. Place lid on blender and turn on high until all thoroughly combined. Once it is done blending, add in the chocolate chips and any additional add ins you choose (like the chopped nuts). Mix gently with a spatula. Scoop out even portions into all 12 muffin tins. Place in the oven on the middle rack and bake for 15 minutes or until a toothpick (or chopstick, knife, etc.) comes out clean and without crumbs.

    Take out the oven and place muffins on a cooling rack. Let sit for 10 minutes then enjoy for breakfast, snack, or dessert!
